Yes, Cypress sounds good, like the Italian gardens. Lots of them would create shade, so that things planted under them wouldn't dry out as fast. Anything that makes shade would be good like that. Maybe other Italian things too, like Olive trees and Date Palms? Native weed type trees that grow fast would give temporary shade for other things too, and be free.
